Applesauce Pancakes

About the Recipe

Here is a simple, family-friendly breakfast that’s especially handy when you need something gluten-free, dairy-free, and egg-free without a long list of specialty ingredients. Add in your favorite berries or chocolate chips if you want, and top with honey!

Ingredients

  • 3 c all purpose GF flour

  • 3 tsp cinnamon powder

  • 4 1/2 tsp baking powder

  • 1 1/2 c applesauce

  • 1 1/2 c water (or milk of choice)

  • coconut oil (for cooking)

Preparation

  1. In a bowl, combine your flour, baking powder, and cinnamon.

  2. Add in the applesauce and water and mix well. Let it stand for about 5 mins.

  3. Oil your pan with coconut oil and bring to medium heat. Add about a 1/3c of batter per pancake. (I like to use the scoop to spread out my pancakes evenly). Let it cook until the edges are set and the center is bubbly. Flip and cook the other side.

  4. Serve with desired toppings (we use honey and fresh fruit)!
