Apple Carrot Muffins

About the Recipe

We love these muffins! They have fruits, veggies, AND walnuts (if tolerated), and NO refined sugar! They pack fat, fiber, and protein to start your day off right! My kids approve, I bet you will too!

Ingredients

  • 3 tbsp ground flax meal (+9 tbsp water)

  • 2 c old fashioned oats

  • 1 c walnuts (optional, but yummy and nutritious if tolerated!)

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tbsp cinnamon

  • 1/3 c honey

  • 1 c apple, diced

  • 1 c carrots, grated

  • 1/4 c coconut oil

  • 1/4 c water

Preparation

Step 1

Preheat oven to 350 F.

In a small bowl, combine ground flax with 9 tbsp water and set to the side.

Chop and grate apples and carrots and set to the side.



Step 2

In a food processor or blender, combine all dry ingredients (Walnuts, oats, salt, baking powder, baking soda, cinnamon) and blend until medium-fine powder.



Step 3

Add flax mixture, apples and carrots, and remaining ingredients (water, honey, melted coconut oil) to food processor or blender and blend until batter forms.



Step 4

Oil muffin tin with coconut oil and fill with 1/3 c of batter.

Bake for 25 min or until a toothpick comes out clean.



Step 5

Let cool completely before serving, otherwise the centers may be a bit moist (which is okay because there was no egg used!).


Enjoy when ready!
