Applesauce Muffins

About the Recipe

This is one of my quick and easy breakfast go-to! It is simple staple pantry items I almost always have, they are just a quick combine and bake! I can make these basic or with add-ins, and my kids still love them! My favorite part? I can blend in walnuts and my kids get a complete fat, fiber, and protein breakfast, they didn't even know about!

Ingredients

  • 2 c oats*

  • 1/2 c walnuts (optional)

  • 1 tsp baking powder

  • 1/3 c honey (or sweetener of choice)

  • 1/2 c unsweetened applesauce

  • 1 tbsp cinnamon

  • 1/3 c water*



NOTES:

Oats- these will be blended up for your flour mixture. You can use oats, or GF flour if you want! I personally use oats for their fiber content, and they are more cost effective. depending on the quality of your blender/food processor, they may not be as smooth.


Water- you can use any milk substitute here, or just water, which is my go to!


ADD-IN- Add a 1/4 - 1/3 cup of your favorite add-in (blueberries, chocolate chips, raisins) get creative!



Preparation

Step 1

Preheat oven to 375 degrees


Step 2

In a food processor/blender, combine all dry ingredients.


Step 3

In a bowl, combine all wet ingredients. Add in the dry ingredients and mix well (stir in any add-in's here).


Step 4

Spoon mixture into a greased muffin tin, and bake 10-12 mins.


Cool and enjoy!
