Chicken N' Dumplings

About the Recipe

This classic southern comfort dish is a stress free delight! I have the most minimal recipe here for you! My family always loved chicken and dumplings growing up, and now, I am so happy to have a gluten AND dairy free recipe!  If you don't have and Insta-Pot, don't worry! You can still make this dish in a stock pot.

Ingredients

Soup/Broth

  • 2 lb chicken breast

  • 6 c chicken broth*

  • 1 tbsp salt

  • 1/2 tsp black pepper

  • 1 tsp rosemary

  • 1 tsp thyme

  • 1 tsp oregano


Dumplings

  • 2 c GF flour*

  • 1 c Water*

  • 2 tsp salt

  • 1/2 tsp Italian seasoning

  • 4 tbsp coconut oil*



*Substitutions:

Broth- you can use any pre-made broth that suits you or you can just use water and season to your taste! I personally like to use the broth the chicken is cooked in and add a few bouillon cubes.

GF Flour- I have blended oats to use for flour before, though my favorite is to use traditional GF flour blends. You can use whatever you got! Don't be afraid!

Water- water is my go-to milk substitute, however feel free to substitute any DF milk you like, or real milk if tolerated!

Coconut Oil- My go to fat replacement is coconut oil, provided, the coconut flavor doesn't overpower the theme of the meal! If tolerated you can use real butter, ghee, or any DF butter substitute!



Preparation

Step 1

Place all the soup/broth ingredients in the Insta-Pot and set to "High Pressure" cook for 35 minutes. It will take at least 10 minutes to build pressure and then the countdown will begin.



Step 2

For the dumplings, mix the GF flour, salt, Italian seasoning, and baking powder. Next cut in the

coconut oil. last, add the water and mix until well combined and set to the side.



Step 3

When done, allow to natural pressure release for 10 minutes before manually releasing remaining pressure. Shred chicken and put back into pot.



Step 4

With lid off, set Insta-Pot to "sauté" mode and bring contents to a simmer. drop dumplings by the spoonful into simmering broth and allow to simmer for 5 minutes and turn off.

Serve and enjoy!



*NOTE: 

You can make this without and Insta-Pot and use a big stockpot instead, you will just need to manage more carefully!
