Italian Sausage Lentil Soup

About the Recipe

This is my personal favorite recipe! If I could get my family on board, we would eat this every night! What a Power house of nutrition in a one pot meal! The best part! If you can chop veggies, and brown sausage, you will be a master for this dish!

Ingredients

  • 1/2 lb sausage (Italian sausage is yummiest, but not necessary)

  • 1 1/2 cup lentils

  • 1c kale/spinach

  • 1 onion, diced

  • 2 lg carrots, grated (about 2 cups)

  • 3 cloves garlic. minced

  • 1 tomato, cubed

  • 2 c water

  • 4 c chicken broth*

  • 1 tbsp apple cider vinegar

  • 1 tbsp salt

  • 1tsp basil

  • 1tsp parsley


    *Notes:

    Broth- I use bouillon cubes and LOVE IT! Just follow the bouillon package for the ratio to water and you will have an easy broth! Or you can always just add water for the broth and season your own way!

    Basil/Parsley- Italian seasoning can easily replace these, so if you don't have these herbs right off, don't sweat it! you can use them next time!


Preparation

Step 1

In a large stockpot, add a touch of cooking oil of choice, and sauté the garlic and onion. then brown and chop the sausage.


Step 2

Add all other prepared ingredients EXCEPT the kale/spinach and bring to a boil.


Step 3

Reduce to a simmer and stir occasionally for 40 mins or until lentils and potatoes are tender.


Step 4

Remove from heat and mix in kale/spinach.


Serve when cooled enough and enjoy!
