Shrimp N' "Grits"

About the Recipe

Shrimp and grits has always been a favorite in our home! But, I always felt a little guilty about serving the corn grits as the filler. After becoming more familiar with using quinoa, in the instant pot, had the epiphany to use quinoa in place of the grits and thus, the Instant Pot Shrimp N' "Grits," was born! It was a huge success in my book! Now we have a powerhouse grain and a base that isn't just empty calories! I hope you love it!

Ingredients

  • 12-16 oz shrimp, peeled and deveined

  • 1/2 lb sausage (ground sausage is fine, or be fancy and use "Andouille" smoked sausage)

  • 3 c quinoa

  • 4 c broth (Water + 4 bullion cubes)*

  • 1 tbsp salt

  • 2 tsp turmeric

  • 1-2 onions, halved and sliced thin

  • 2 bell peppers, thinly sliced


NOTES

Broth- you can use plain water and season with bullion cubes (read the brand packaging for proper ratio).

Onion and Pepper- I personally LOVE onions and peppers, so the more the merrier! You add as many as you want! I love slicing them into slivers for bigger pieces in my dish, However, You may want to mince and make them small and fine for texture reasons! You do you!

Preparation

Step 1

In the instant pot, combine broth (or water + bullion), quinoa, salt and turmeric and set to HIGH pressure for 1 minute.

--It will take up to 10 minutes to build pressure and it will take 10 mins to "naturally release" pressure. As a sidenote, once this process is started you will have about 20 minutes to use to prepare the other ingredients (see note*).


Step 2

While instant pot is building pressure and cooking, brown sausage in a pan, remove and set aside.

In the same pan, cook shrimp, remove and then set aside.

Sauté onions and peppers and set aside.


Step 3

When instant pot is done, allow to "natural release" pressure for 10 minutes before manually releasing remaining pressure open instant pot and stir.

--If you want a more creamy/soupy texture, you can add 1-2 cups of broth to the , or milk/cream (if you tolerate dairy)


Step 4

Combine ingredients and serve!



NOTE

*If you are looking to save a little more effort, you can add onions, and peppers with the quinoa in the instant pot at the beginning. It may not "look as fancy," and the texture may be a little more "done," but I have tried it and it would just fine for us!
